Fresh and Simple Dressing


Bought myself a box of raspberries over the weekend and decided to make a healthy AND delicious raspberry vinaigrette.  It came out so good, I’ve decided to share this recipe with all of you.   This dressing brings an impressive punch of flavor to food and the best thing about it is it only takes six common ingredients.

I used this dressing for a spinach salad with crumbled feta cheese, green peppers, cucumber, fresh raspberries and chicken; however, this dressing would also be delicious used in a modern veggie sandwich or as a simple sauce drizzled over baked chicken breasts.  I like that not only is this a tasty dressing but also one that gives me a serving of fruit with each use.  Enjoy!


1/2 cup raspberries

1/4 cup apple cider vinegar or balsamic vinegar

2 tsp sugar (or agave nectar)

1 tbsp dijon mustard

1/4 vegetable (or olive) oil

Salt and pepper to taste

2 tsp chopped shallot (optional)


Blend all ingredients together, add salt and pepper to taste.  This dressing will stay good in the refrigerator for 1-2 weeks.
